This summer, we started off our cooking series by whirling up a faux "mojito," a fresh peach cooler with mint, which the kids love to smush. The recipe is based on one I found in People magazine. This is so delicious! The kids loved it, and so did adult guests at two potlucks I attended. I'll use it all summer long, and with frozen peaches all year!

Ingredients

  • 2 – 3 ripe peaches or nectarines, unpeeled, roughly chopped
  • one ripe banana
  • scant 1/4 cup (or less) sugar
  • 1/4 cup fresh lemon or lime juice
  • 1/2 cup fresh mint leaves
  • 2 cans chilled fruit-flavored sparkling water – we used lemon Spindrift

Instructions

  1. Add the chopped peaches, banana, sugar and lemon or lime juice to a blender and puree about 30 seconds, or until smooth.
  2. Smush mint leaves in the bottom of a large pitcher.
  3. Add puree, and then slowly pour in the sparkling water. Stir.
  4. Serve in ice-filled glasses and garnish with mint or fruit slices.
