What sounds better on a hot day than a fresh, cold watermelon-and-lime drink with bubbles?  Well, here's the recipe. An added attraction with this recipe is blenderizing chunks of fresh-cut watermelon, which is a mouth-watering sensory experience.  AND the kids loved crushing fresh mint leaves into the sugar. While some recipes strain the watermelon puree and just use the juice, I like the solids, too -- and they're vitamin and fiber-rich!

Ingredients

  • 4 cups seedless watermelon chunks
  • 1/2 cup sugar, less if watermelon is very sweet
  • 1/2 cup lightly-packed washed fresh mint leaves
  • 2 1/2 cups white grape juice
  • 1 teaspoon finely shredded lime peel
  • 3/4 cup fresh lime juice (from 5-6 limes, or a bottle if you must)
  • 2 cups chilled club soda
  • Ice cubes
  • Fresh mint sprigs and watermelon spikes, if desired, for garnish

Instructions

  1. Put the watermelon chunks in a blender; cover and blend until smooth.  Strain through a fine mesh sieve to catch stray seeds, and discard pulp if you prefer.
  2. In a large bowl, combine sugar with the mint. Using the back of a wooden spoon, crush mint into sugar to release its flavor.
  3. Add grape juice, lime peel, lime juice, and watermelon liquid and stir until sugar is dissolved.  Stir in club soda.
  4. Serve in glasses over ice, and garnish with mint and/or watermelon spikes.
  5. Serve immediately.
