No kidding -- whole wheat, low fat, veggie-rich, and delicious. That's what these pizzas are. Just ask your children!
The CATS kids made these pizzas right after Halloween and there were still a few Jack-o-Lanterns to be seen.
1 jar, can, or refrigerated plastic tub of pizza sauce
1/2 of a 12-0z bag lite (low-fat) shredded cheese blend
Sweet peppers, yellow, red or green, sliced vertically with white parts and seeds removed
Sliced black olives
Mushroom pieces, zucchini slices, tomato slices, or other veggies as desired
Meatless sausages, sliced or chopped (or regular sausages, sliced or chopped) as desired
Instructions
Let pizza dough rest briefly at room temperature, as per package directions. On a lightly-floured surface such as a cutting board, OR directly on a foil-covered, oil-sprayed cookie sheet, roll or pat dough into a large round or oblong shape about 1/2″ thick. Use flour to keep it from sticking as necessary. Try to make the dough of uniform thickness.
Spread pizza sauce gently on top of the dough with a spatula or back of a spoon. Sprinkle cheese over the surface evenly, trying not to get it on the pan surface (where it may burn.) Add veggies and other toppings as desired.
For the pumpkin shapes, place the vertically-sliced peppers around the edge of the pizza, and use sliced olives, tomato slices, etc. to make face shapes.
Bake as directed on dough package.
