This is a yummy snack, or even breakfast, that you or your kids can make quickly and feel good about! Whole grains, protein, fruit, and a touch of sweetness combine for a fun new "sandwich."
Ingredients
- 4 8-inch whole wheat flour tortillas
- 2Â bananas
- 4 Tablespoons Neufchatel (Lower-fat cream cheese), softened
- 2 Tablespoons almond butter
- 2 teaspoons brown sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg (if desired.)
- 4 large strawberries, sliced, if desired, and blotted on paper towel
Instructions
- Put a large nonstick frying pan on the stove and spray with nonstick spray, or add a very small pat of butter.
- Mix together the cream cheese, almond butter, spices, and brown sugar in a small bowl. A small spatula works well.
- Take tortillas one at a time, and spread a small scoop on half of the inside surface of the circle. (This is the glue that will hold the quesadilla together.)
- Peel bananas. Either slice them in 1/4″ circles, or slice in long “slabs” about the same thickness.
- Gently press a layer of banana slices over the cream cheese filling. If adding strawberries, lay those slices on top.
- Heat the frying pan over medium heat. Gently fold the tortilla in half to enclose the filling, and put in the pan (a parent’s job for little kids). Watch to see that the tortillas brown slightly, and then turn them over. It should take only a couple of minutes per side.
- Remember that the filling may be quite hot, so cooling these off briefly is a good idea before diving in!
