Nobody seemed to miss the meat in these Sloppy Joes. And most kids wanted seconds.  I had NO idea this would be such a hit.  We served them on  potato hamburger buns, which were really good though whole grain buns or English Muffins would be even healthier.  It's great that the recipe makes a large amount,  because it will all disappear. This is based on an idea from the popular blog "Chocolate Covered Katie" where you can find some wonderful kid-friendly recipes.

Ingredients

  • 2 cans lentil soup, i.e. Progresso (drain some of the liquid out)
  • 1 tablespoon minced garlic
  • 1/2 cup chopped onion or leek
  • 1 teaspoon chili powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cinnamon
  • 2 teaspoons sugar
  • 14 oz. can of tomato sauce
  • 2 teaspoons apple cider vinegar (some kids don’t like this so I reduced the amount)
  • 2 tablespoons soy sauce
  • Hamburger buns or English Muffins, preferably whole-grain

Instructions

  1. In a very large skillet, saute the garlic and chopped onion until softened.
  2. Add the lentil soup, spices, tomato sauce, vinegar and soy sauce.  Bring to a boil, and cook uncovered until thickened enough to spoon over the hamburger buns or muffins.
