We served these with honey butter:  mix 1 part honey with 3 parts light butter, softened.  Delicious!

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 2 heaping tablespoons brown sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3/4 cup mashed roasted sweet potatoes, cooled
  • 1/4 cup softened light butter
  • 2-4 tablespoons buttermilk

Instructions

  1. Heat oven to 400 degrees.
  2. Lightly grease two foil or parchment-covered  baking sheets.
  3. Stir together flours, sugar, baking powder, salt and cinnamon.
  4. In a separate bowl, mix the sweet potatoes with the butter.  Add flour mixture to potato mixture to make a soft dough.  Add buttermilk one tablespoon at a time and continue to mix gently. Turn dough onto a floured board and toss lightly until outside surface looks smooth.
  5. Roll the dough out to 1/2″ thick, and cut with a biscuit cutter. (We used various shapes).  Place the biscuits on a greased baking sheet and top with melted butter (try adding a sprinkle of cinnamon-sugar.)
  6. Bake for 12-16 minutes – watch carefully!  Cool slightly and enjoy warm.  Can also be frozen.
