Stained Glass Jello

This recipe was a whole lot of fun - and it looks very festive, good for a holiday table.  It can be a salad or a dessert or a snack. It's very easy, but chilling time is needed. The "stained glass" look of this recipe comes from making four flavors of Jello, cutting them into cubes, and then creating a white gelatin mixture to hold the cubes together.


Ingredients

  • Four flavors of Jello, or other gelatin dessert mix, in the 3-oz box. Try to get four distinct colors, such as lemon, orange, cherry, and grape.
  • Fruit juice such as apple, grape, pear or white cranberry
  • 1 14.-oz. can fat-free sweetened condensed milk (not to be confused with evaporated milk)
  • Two envelopes of unflavored gelatin (We used Knox)

Instructions

  1. Make each of the four separate flavors of Jello, dissolving the powder for each one into only one cup of boiling water or juice, so it will be very firm. (For light colors such as lemon, do not use a dark juice.)  Pour each color into separate square or rectangular containers – ideally, of the same size.  Chill in the refrigerator until firm.
  2. Cut each Jello flavor into small square blocks, about 1″ square.  Mix the four colors of blocks carefully in a 13 x 9″ glass pan.
  3. In a medium bowl, sprinkle the two envelopes of unflavored gelatin powder into 1/2 cup of cold water.  When the gelatin becomes thicker, add 1 1/2 cups of boiling water, and stir to dissolve.  Add the can of condensed milk and mix well.  Cool the mixture, and then pour gently over the jello cubes.  Chill overnight. Cut into squares or rectangles to serve.
