CATS has a thing for smoothies.  This time, while the weather is still hot and frozen concoctions are still so welcome, we got a little more creative.  These smoothies layer two separate fruit flavors on top of each other.  Each color has a SECRET ingredient and boy, were they good.

Ingredients

Layer #1:

  • 2 1/2 cups of frozen mango chunks
  • 1 cup of fresh strawberries, washed and stemmed
  • 1/2 cup vanilla fat-free yogurt
  • (secret ingredient) – one frozen Mango & Vanilla Cream Bar from Trader Joe’s – sold in package of 8, 40g each
  • 2 Tablespoons honey or less, to taste
  • 2 tablespoons water
  • 1/2 teaspoon grated lime rind

Layer # 2:

  • 3 ripe kiwifruit, washed, with fuzzy peel removed
  • 1/4 cup nonfat vanilla yogurt
  • 2 tablespoons honey
  • 1 cup ice cubes
  • 2 tablespoons green tea, cooled
  • (secret ingredient) 3/4 cup fresh kale leaves, washed and torn, with tough stems removed

Instructions

  1. Blend layer 1 in a blender until smooth, tasting for sweetness.  Pour equally into 4-6 serving glasses, as desired, and store in freezer.  Rinse out blender and make the next batch.
  2. Whirl layer 2 in blender until smooth, stirring if necessary.
  3. Remove the glasses from freezer, and carefully spoon kiwi mixture (layer 2) on top of mango mixture (layer 1), attempting to keep layers separate. Serve immediately.

More Information

The kids all wanted spoons to blend their two-tone smoothies together, and enjoyed the mix of flavors.  They said they could hardly taste the kale!  The secret ingredients got two big thumbs-up.
