Try this beautiful dip with fresh chips you make yourself, such as the Won Ton Origami Crackers (see post) -- or cut corn or wheat tortillas into fun shapes with a knife or clean scissors before toasting in the oven.
Ingredients
- 1 16 oz. can fat-free refried beans
- 2 cups fresh or prepared guacamole (I use Trader Joe’s)
- 2 cups light sour cream
- 1 tablespoon chili powder (or to taste)
- 2 teaspoons cumin
- 2 cups shredded light cheese, either cheddar or Mexican blend
- ½ cup black olives, sliced
- 1 cup chopped fresh tomatoes
- ¾ cup sliced green onions
Instructions
On a wide platter or in a 13 x 9” baking pan, spread the layers in this order:
- Refried beans
- Guacamole
- Sour cream, blended with chili powder and cumin
- Shredded cheese
- Mixture of black olives, chopped tomatoes, and green onions.
