A blog called She Knows had this recipe for an adorable appetizer that looks like a tiny slice of pie, but is really cheddar on crackers.  This is adapted slightly to avoid using a pastry bag to pipe the cream cheese - unless you have one!

Ingredients

  • A good-sized brick of cheddar cheese, such as Tillamook or store-brand
  • Triscuit Thin Crisp crackers – these are shaped like a triangle (and fairly healthy!)
  • Chicken in a Biskit crackers
  • Whipped light cream cheese

Instructions

  1. Using a Thin Crisp cracker as a template, cut a triangle-shaped slice of cheese about 1/2″ thick. (We made a stack of cheese slices first, and then cut them into triangles. )
  2. Put a small dab of  cream cheese in the middle of  the cracker, and “glue” the cheddar on top.
  3. Dab some more cream cheese on one edge of a Chicken in a Biskit cracker and glue it to the back of your “pie” slice, to form the back crust.
  4. Put a dollop of cream cheese on top of the “pie” to look like whipped cream.
