We gave each child a small bowl, half an avocado, a fork, and some optional add-ins.  The rest is history.  They designed their own guacamole, and then we sliced up a bunch of different types of tortillas with a pizza cutter, and baked 'em up:  fresh chips!  Without all the fat and salt, they're still delicious!

Ingredients

Guacamole

  • For each person:
  • 1/2 very ripe avocado
  • As desired:
  • salt and pepper
  • onion powder
  • chopped tomatoes
  • jarred or homemade salsa
  • Minced cilantro ( they mostly didn’t like it)

Homemade Tortilla Chips

  • 1 pkg. flour, corn, or mixed/hybrid small tortillas (we used low-carb and half wheat/half corn from Safeway. There are many new types.)

Instructions

Guacamole

  1. Mash all up in the bowl.

Homemade Tortilla Chips

  1. Preheat oven to 350 degrees.
  2. Put the tortillas on a cutting board, one at a time, and cut into wedges using a pizza cutter or large knife.
  3. Place on cookie sheets. Spritz with cooking spray if desired.
  4. Bake a few minutes until slightly browned; flip to cook evenly.
  5. Remove from oven when well toasted; salt lightly.

More Information

(Tip: some cooks leave the tortillas out for a few hours so they get drier – helps them crisp up faster in the oven.)
