One of our teachers, Sharla, handed me this cute appetizer idea from a website and I knew we had to try it. Here's the recipe, based on one from Taste of Home. No bugs were harmed in this experiment.
Ingredients
- 2 oz. lowfat (or Neufchatel) cream cheese, softened
- 2 tablespoons lowfat sour cream
- 1/2 teaspoon minced chives
- 1/8 teaspoon garlic salt
- 1/2 teaspoon minced fresh parsley
- 36 round crackers – we used whole wheat ones from Trader Joe’s. Look for lowfat versions.
- 18 cherry tomatoes, quartered
- 18 large black olives, pitted
- 1 package or handful of fresh chives, washed and patted dry
- 1 small tube black gel frosting (from baking aisle of grocery store)
Instructions
- In a small bowl, beat the cream cheese and sour cream until smooth. Add the chives, garlic salt and parsley, and spread over the crackers. Arrange two tomato quarters on each one for the ladybug wings.
- Halve the black olives width-wise to make the heads, and place on the cracker. Insert two chive pieces for antennae.
- Use the frosting tube to add a few tiny black dots to the wings. The sweet taste actually blends in nicely.
