The star of this super-healthy salad was clearly the mandarin orange segments.  Good thing I brought extras, cuz we put them all in!  After this session, I modified the recipe to increase the orange part of the "rainbow"  - so try it at home and see what your kidlets say! If you check this blog frequently, you already know that your children are happily eating kale. It comes in SO many varieties. Try to get two and mix 'em up as the recipe directs.
2-3 servings

Ingredients

  • 1 cup purple kale, chopped
  • 1 cup Tuscan kale, chopped
  • 1/2 cup red cabbage, chopped
  • 3-4 seedless mandarin oranges, peeled and pulled apart into segments
  • 1/2 red onion, sliced thinly
  • 1/2 yellow pepper (or any color) chopped
  • 2 tablespoons chopped walnuts or sunflower seeds (Allergy alert! And surprisingly, many of the kids did not want the seeds.)
  • 3 tablespoons freshly-squeezed orange juice
  • 1 teaspoon Dijon mustard
  • salt and pepper

Instructions

  1. In a large bowl, mix the two kinds of kale with the cabbage, onion, peppers, mandarins and nuts or sunflower seeds.
  2. In a small bowl, whisk together the balsamic vinegar, OJ, and Dijon mustard.
  3. Pour the dressing over the salad and toss until the leaves are well coated.
  4. Season with a bit of salt and freshly ground pepper – if the kids will tolerate it. Serve cold or at room temperature.

This is based on a recipe from Tartine and Apron Strings, yet another cool cooking blog.  It is meant to serve 2-3 generously, and we tripled it for CATS.
