Oh, boy. This seems too good to be true, but sometimes... it's true!  First we checked for lactose and almond allergies.  Then, we took six ingredients and made something very much like soft-serve ice cream in less than ten minutes. But our version has very low sugar, almost no fat, and tons of fresh fruit. The kids polished it off so fast we had to make it twice. You will want to freeze the fruit the night before.

Ingredients

  • 1 1/2 medium bananas, peeled, sliced into rounds and frozen until solid
  • 1/2 cup roughly chopped frozen strawberries
  • 3 tablespoons almond milk (or soy milk or cream – we used fat-free half & half)
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1/4 cup almond butter (or to taste)

Instructions

  1. Whirl fruit and milk/cream in food processor until it resembles soft-serve ice cream. Add vanilla, cinnamon, and almond butter. Pulse until well combined. If it needs sweetening, use a bit of honey. Serve immediately, or freeze in a freezer container.

You could also try adding different things for different versions:

Chocolate Banana Ice Cream: to the bananas, add 3 tablespoons unsweetened cocoa powder, 2 tablespoons or more of milk/cream, and 1/2 teaspoon vanilla

Nutella Banana Ice Cream: to the bananas, add 3-4 tablespoons of Nutella or other hazelnut-chocolate product

Cinnamon Dulce Banana Ice Cream: to the bananas, add 3 tablespoons sweet condensed milk and 1/2 teaspoon cinnamon
