These are very often requested! They really capture the kids' imaginations and we may have to create some sort of food "lake" (blue hummus?) on which to float them.

4, with two deviled eggs each

Ingredients

  • 4 hard-cooked eggs, carefully cut horizontally in half
  • 1 Tablespoon light mayonnaise
  • 1-2 teaspoons yellow mustard (optional)
  • 2 teaspoons pickle relish (optional, we used sweet relish)
  • fresh parsley, minced
  • paprika (especially smoked paprika)
  • Triangular corn chips – thick, sturdy ones work best.

Instructions

  1. Gently remove the yellow yolks from the hard-cooked eggs, and place the yolks in a bowl.
  2. Mash the yolks with the mayonnaise and add the other ingredients if you and your kids like them. (Some of our students dislike mustard.)
  3. blend in the fresh herb.
  4. Spoon the mixture into a plastic zip-top bag, and zip it closed. Snip a small bottom corner of the bag to make a 1/2″ hole, and squeeze the yolk mixture into the empty white eggs.
  5. Sprinkle the paprika on top of the mixture.
  6. Top with a corn chip to turn the deviled egg into a tiny sailboat.
