I don't have a photo of this recipe. We made three batches, with about 24 kids total. With each batch, the smoothies vanished before I could take a picture. I've never had a more-requested recipe! So here you go. I put together a few recipes from the web, and then we added our own CATS touches.

Ingredients

  • 2 cups frozen pineapple chunks (We used Trader Joe’s)
  • 1 cup Trader Joe’s Vanilla Coconut Beverage (in cartons next to the almond milk in dairy case)
  • 2 bananas, peeled and cut in chunks (we used frozen bananas left over from last week’s Banana Dolphins)
  • 2 tablespoons shredded toasted coconut, if desired
  • 1/2 cup orange or pineapple juice
  • 3/4 cup baby spinach, washed and loosely packed
  • 1/2 cup mango sorbet (if desired)
  • 6 frozen strawberries
  • 1/2 cup plain yogurt (omit for dairy-free version)

Instructions

Whirl together in a blender until the pink/yellow/orange colors are swirled, or to desired consistency. Taste and adjust flavors.  Top with more shredded toasted coconut if your kids like it.

We served these in glasses with a spoon.
