Sometimes, we try a recipe that I KNOW the kids will love, and it gets a lukewarm response. This one got a huge, positive response, with a big crowd around the big table to make it, and an even bigger crowd to taste it when the toasted oatmeal scent spread through CATS! The kids finished every crumb. You can bake it in a pie plate, or even in just a healthy, free-form blob on a cookie sheet lined with parchment paper or foil. It's a great quick breakfast or snack.
Ingredients
- 1 apple, washed and unpeeled, cut into 1/2″ chunks (we love Pink Ladies)
- 1.5 cups flat, steel-cut oats (not quick oats)
- 3/4 tsp. vanilla
- 1.5 teaspoons cinnamon
- 4 tablespoons maple syrup
- 3/4 cup unsweetened applesauce
- 1/2 cup almond milk
- 1/8 teaspoon salt
- 3 tablespoons almond butter
- 1/2 cup raisins
- 1/2 cup chopped toasted almonds
- 1/2 cup granola
Instructions
- Preheat oven to 380 degrees.
- Spray a large baking pan or a pizza pan or cookie sheet with vegetable oil, or line with parchment paper or foil.
- Combine the oats with the applesauce. Add cinnamon, syrup, almond milk, salt, apple and raisins, and mix gently.
- Spread in the pan or on the baking sheet to about 3/4″ thick. Top with the granola and toasted almonds.
- Bake for 15-20 minutes, or more, until firm. (If underbaked, it doesn’t have the same flavor.)
- Cool, cut into wedges or bars, and enjoy!
