Instead of using food coloring to make our eggs green, we used, um, food! Fresh spinach and pesto (made from basil leaves, garlic, oil, and Parmesan cheese) were the color agents, offering us a bit more nutrition value and amazing flavor. The kids loved adding a little more cheese on top.
Ingredients
- 4 eggs, or one per person (can also use 1 egg plus one extra egg white)
- Splash of water or milk
- 3 cups washed fresh spinach, chopped roughly
- 1 thin slice ham, prosciutto or Canadian bacon per person (or meat substitute)
- 1 tablespoon pesto per egg, or more to taste
- Olive oil for pan
- Grated Parmesan or Parmigiano-Reggiano cheese
Instructions
- Crack eggs into a medium-sized mixing bowl, and add a splash (about a tablespoon) of water or milk. Add pesto and 1-2 tablespoons of grated cheese if desired. Scramble all together.
- Tear the ham into bite-sized pieces.*
- With a grownup’s help, heat pan on medium heat. Add oil and gently tilt to coat pan. Pour egg mixture into hot pan. Add ham pieces, and slowly stir eggs with spatula until fully cooked. (They should be firm but still moist.)
- Top with cheese if desired.
* You can also cook the ham separately, or omit.
