No crust, no cheese. This fruit pizza is beautiful, delicious, fast, low-fat, nutritious and easy to eat. We loved it! You can make it into a fun little project at a picnic or party.
Watermelon is loaded with vitamins A, B and C and lycopene and many other beneficial components. In the hot summer, it's also a great thing to help replenish fluids for active kids in the sun.
Ingredients
- Two to four 1″ thick crosswise slices from a seedless watermelon
- 1 cup Greek yogurt, honey vanilla flavor or other, as preferred
- assorted sliced or chopped fruit: i.e. bananas, peaches, oranges, kiwi, grapes, strawberries, blueberries, grapes, Mandarin oranges
- Shredded coconut, chopped nuts or granola if desired
Instructions
- Spoon the yogurt into a coffee strainer inside a bowl. In a few minutes, some of the whey will trickle out and the yogurt will thicken.
- Blot the watermelon slices with a paper towel.
- Spread the thickened yogurt on the watermelon with a butter knife. (Some kids preferred theirs without yogurt.) Top with slices or pieces of fruit, berries, etc. You can sprinkle on coconut for “cheese.”
- You can make it look like a pizza, or make a circular pattern with your toppings, or just go for broke and pile ’em on.
- Using a large knife or a pizza cutter (a parent’s job) cut the “pizza” into six or eight wedges, as desired.
- Serve with napkins!
