I LOVE to see what the kids do with an idea. The concept of "making a picture with salad ingredients" - or a Composed Salad - was really fun. The photo at top is supposed to be me, but with red hair, walking on the beach. (I am pleased to look so skinny.) Here is the way we did this - basically, just setting out a whole lot of colorful healthy items and going for broke. We found that plastic knives worked very well on the components. Feel free to get creative and change it  up.  We did a Lemon Yogurt salad dressing with herbs, which follows.

Ingredients

Composed Salad Components:

  • Mixed greens
  • Hard-cooked eggs
  • cherry tomatoes
  • steamed green beans
  • steamed tiny potatoes
  • olives
  • beans (i.e., Garbanzo)
  • miniature mozzarella balls or other cheese
  • tuna or chopped turkey, bacon, ham, salmon or other meat/fish if desired
  • Persian cucumbers
  • radishes
  • shredded carrots

 

Simple Lemon Yogurt Dressing:

  • 1 cup plain yogurt (I like low-fat Greek)
  • 2 tablespoons lemon juice
  • 1/2 tsp. garlic powder
  • 1 tablespoon chopped parsley, fresh
  • 1 tablespoon chopped green onions, minced yellow onion, or chives
  • 1 tablespoon finely chopped sweet pepper
  • Other fresh herbs as desired, i.e., chopped basil
  • 1 teaspoon prepared mustard (i.e., Dijon or honey mustard)
  • Salt and pepper to taste.

Instructions

  1. Consider making a flower shape, or a scene, or a face, or any other thing you can think up using the fresh colorful veggies as your collage material. Build it on a bed of greens if you like, and try to have some soft, some crunchy, and maybe some sweet and salty textures and flavors.
  2. Whisk the dressing ingredients together and taste. Add more lemon juice, etc., to taste. Store in refrigerator.
  3. Pour on the dressing as desired.
  4. Enjoy!
