Yes, this does sound crazy. And yet these are durn good!  Next time, however, I might make chocolate crepes, rather than homemade tortillas, due to the consistency of this mixture  (thick and chewy!) and the fact that certain parties got impatient waiting for them to cook all the way through, which I hear took FOREVER. We did use whole wheat flour, and very little sweetener in the tortillas, which might be why they were so challenging.  Also, we used coconut oil which (surprise!) some kids do not like. Before we go back to the drawing board, however, consider this recipe - bet your kids can't keep their hands off the novelty of a chocolate taco.

Ingredients

  • 1 cup whole-wheat flour
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup cocoa powder (Trader Joe’s is excellent)
  • 1/3 cup coconut oil
  • 2-3 tablespoons honey
  • 1 1/2 cups warm water
  • 1 mango, chopped
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • Other fruit, if desired, such as diced kiwi, papaya, raspberries, bananas
  • Juice from one lime
  • 2 small cartons vanilla or fruit-flavored yogurt
  • Toppings if desired, such as chopped nuts, granola, coconut, etc.

Instructions

  1. Combine the flours, baking powder, salt and cocoa in a large bowl.
  2. Add the coconut oil, honey and warm water to the bowl. Mix with a wooden spoon until the dough forms a large ball.
  3. Transfer the ball of dough to a flat, floured work surface and knead for five minutes, adding more flour if it gets too sticky.
  4. Cut the ball of dough in half, rolling both pieces into balls. Continue to cut the balls in half until you have 16 even pieces. Let the dough rest for 10 minutes.
  5. Meanwhile, wash and chop your fruit (except blueberries). Drizzle fruit with juice from the lime; set aside.
  6. Heat a heavy skillet over medium heat. DO NOT add oil – the tortillas need to be cooked on a dry surface.  When hot, add one rolled-out tortilla at at time.  (Lots of our kids wanted to make theirs into heart shapes, which actually worked quite well.)  Cook until lightly brown on the bottom, which should take one minute but actually takes more. Flip tortilla and cook an additional minute or so.
  7. When you have 16 cooked tortillas, you can begin taco assembly.  Put a swoosh of yogurt down the center of a tortilla, add fruit on top of that, and add a topping if you like, such as chopped nuts, shredded coconut, cereal, grated lime zest, fresh mint, or other items.  Fold up the taco down the center, and enjoy!
