These couldn't be simpler - and the reviews from the participants were excellent.  A rolled sandwich is a great after-school snack that the kids can make themselves -- or it's the centerpiece of a nice packed lunch. Whole-wheat flatbread or a tortilla makes the base for these healthy sandwiches. Hummus or cream cheese serves as the glue to hold the veggies on!
1 sandwich

Ingredients

  • 1/2 sheet of whole wheat flatbread, about 4 x 12″(Trader Joe’s and other groceries sell these, packaged, in the bread department) — or try a tortilla
  • Hummus, light cream cheese, smashed avocado or Tzatziki (Greek yogurt-cucumber dip)
  • Light or low-fat shredded cheese – blend or cheddar, Jack, or mozzarella
  • Shredded veggies such as carrots, broccoli, cabbage, lettuce, and/or sprouts, sliced tomatoes, olives, as desired

Instructions

  1. Spread hummus or other spread on the surface of the flatbread, spreading to within 3/4″ of the edges.  Sprinkle on veggies as desired, keeping  distribution fairly even.
  2. Starting at the short end of the bread, tightly roll the sandwich, compressing the filling gently as you roll it into a log.  Eat as-is, or cut in half — or into 1″ slices as desired.  If these are made ahead for lunch, wrap the rolls in foil or plastic wrap to help them keep their shape.

What else would your kids like inside a rolled sandwich? We have tried peanut butter & jam, with thinly-sliced fruit rolled up inside (such as pears), and have also made these with sliced turkey wrapped around a mozzarella cheese stick.  And — roasted veggies are a delicious component too.
