We served these with honey butter: mix 1 part honey with 3 parts light butter, softened. Delicious!
Ingredients
- 1 cup all-purpose flour
- 1/4 cup whole wheat flour
- 2 heaping tablespoons brown sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 3/4 cup mashed roasted sweet potatoes, cooled
- 1/4 cup softened light butter
- 2-4 tablespoons buttermilk
Instructions
- Heat oven to 400 degrees.
- Lightly grease two foil or parchment-covered baking sheets.
- Stir together flours, sugar, baking powder, salt and cinnamon.
- In a separate bowl, mix the sweet potatoes with the butter. Add flour mixture to potato mixture to make a soft dough. Add buttermilk one tablespoon at a time and continue to mix gently. Turn dough onto a floured board and toss lightly until outside surface looks smooth.
- Roll the dough out to 1/2″ thick, and cut with a biscuit cutter. (We used various shapes). Place the biscuits on a greased baking sheet and top with melted butter (try adding a sprinkle of cinnamon-sugar.)
- Bake for 12-16 minutes – watch carefully! Cool slightly and enjoy warm. Can also be frozen.
