Seven-Layer Mexican Dip

Try this beautiful dip with fresh chips you make yourself, such as the Won Ton Origami Crackers (see post) -- or cut corn or wheat tortillas into fun shapes with a knife or clean scissors before toasting in the oven.

Ingredients

  • 1 16 oz. can fat-free refried beans
  • 2 cups fresh or prepared guacamole (I use Trader Joe’s)
  • 2 cups light sour cream
  • 1 tablespoon chili powder (or to taste)
  • 2 teaspoons cumin
  • 2 cups shredded light cheese, either cheddar or Mexican blend
  • ½ cup black olives, sliced
  • 1 cup chopped fresh tomatoes
  • ¾ cup sliced green onions

Instructions

On a wide platter or in a 13 x 9” baking pan, spread the layers in this order:

  1. Refried beans
  2. Guacamole
  3. Sour cream, blended with chili powder and cumin
  4. Shredded cheese
  5. Mixture of black olives, chopped tomatoes, and green onions.

Dig in!
