Yes, it really tastes like pudding. And though I didn't know how the kids would like it, the overwhelming response was excellent. Some of the youngest kids didn't like the taste too well, but most asked for seconds and thirds in their little paper cups! I am hurrying to post this due to lots of requests for the recipe.
Ingredients
- 3-4 fresh ripe mangoes, or one bag of thawed frozen mango chunks (Trader Joe’s), or one can of mango pulp from an Indian store
- 1/2 small banana, peeled (optional)
- One box (12.3 oz.) of silken or firm tofu
- Grated peel of 1/2 lemon
- juice from one lemon
- 1/2 to 1 tablespoon vanilla extract (could try almond extract or other flavorings such as pomegranate concentrate)
- 1/4 – 1/2Â teaspoon cinnamon
- Honey, if needed, to taste (Note: canned mango is already sweetened)
Instructions
- Blend all ingredients thoroughly in a food processor or blender. Pour into cups or bowls. Garnish as desired, i.e., with slivered almonds, a raspberry or strawberry, or fresh mango slices.
- Refrigerate leftovers – if you have any!
