“Bodacious” Broccoli Salad

This recipe is proof that kids DO like broccoli. Not only is it a favorite in class, but it is also being featured at our local Farmers' Market Kids Day cooking class!

Ingredients

2 heads fresh broccoli, chopped in bite-size pieces
1.5 cups Cheddar cheese, shredded
1/2 large red onion, chopped
1/2 cup mayonnaise
1/4 cup red wine vinegar
salt and pepper to taste, about 1/2 teaspoon each
1 teaspoon fresh lemon juice
1/2 cup raisins

Instructions

1. Combine the broccoli, cheese and onion in a large bowl.
2. Whisk the mayonnaise, vinegar, salt, pepper and lemon juice together in a small bowl.
3. Pour the mayonnaise mixture over the veggie mixture and toss together.
4. Refrigerate until ready to serve.

More Information

This recipe is adapted from one at Allrecipes, which also featured crisp bacon and a little bit of sugar in the dressing. We didn’t think we needed those at all! But we did add raisins, a nice counterpoint to the veggies and dressing.
