The gorgeous primary colors in a box of school crayons are in this salad. None of the waxy taste, however. We layered the ingredients in a glass bowl and then mixed them all together in a giant bowl that was bigger than most of the kids.
Ingredients
- 1 cup corn kernels (fresh, frozen or canned)
- 1 cup fresh, shelled edamame
- 3/4 cup carrots, sliced or shredded
- 1 cup thinly-sliced purple cabbage
- 1 cup sliced tomatoes (any kind)
- Balsamic vinaigrette, to taste (about 3/4 cup) OR Balsamic Glaze
- Fresh minced herbs: parsley, basil, chives, etc. to taste
Instructions
Toss together and serve!

If you want something blue, the only food I know that fits that bill is blueberries. Might be surprisingly good! You can also have fun with radishes, fresh peppers, jicama, and any other veggie you like for a raw salad. It is always beautiful and truly packed with nutrients.
